Comme un afternoon tea dans un palace londonien... Les scones !
Incroyable, le soleil brille de nouveau sur Moscou ! Je me suis même octroyé le plaisir d'aller au travail sans capuche, pour sentir les délicieux rayons du soleil réchauffer mon visage. Quel bonheur !
Et en fin de semaine, les températures remontent paraît-il. On va finir par atteindre les 5°C si ça continue !
Trève de bavardage de salon de coiffure, voici aujourd'hui une recette à avoir à tout prix sous le coude, pour le petit-dej' ou pour le goûter. Oui je mange des scones au petit déjeuner des fois, pas vous?
En tout cas, ceux-ci se préparent en un tour de main, ils ont cette texture bien "sablée" que j'adore et sont tout simplement parfaits avec de la confiture. Pour une version 100% british, servez-les accompagnés de clotted cream, de confiture de framboise et d'un thé au lait ! What else...?
RECETTE POUR 7 ou 8 SCONES
(largement inspirée et adaptée de Like a strawberry milk)
250 g de farine
40 g de sucre semoule
1 grosse c à café de levure chimique
1 pincée de sel fin
100 g de beurre froid en cubes
160 g de kefir de lait (ou buttermilk, ou 100 g de lait + 60 g de crème liquide)
1 jaune d'oeuf pour la dorure
Sablez les cubes de beurre bien froid avec les ingrédients secs. Ne travaillez pas trop le beurre sinon les scones n'auront pas la consistance voulue.
Ajoutez le kefir, mélangez juste assez pour incorporer, pas plus.
Abaissez à 3 cm d'épaisseur, laissez reposer au frigo 30 minutes.
Préchauffez le four à 180°C.
Taillez des scones de 6 à 7 cm de diamètre grâce à un emporte-pièce ou un verre. Retournez-les et placez-les sur la plaque du four recouverte de papier sulfu.
Dorez les scones avec le jaune d'oeuf dilué dans un peu d'eau.
Enfournez pendant 15 minutes. Laissez refroidir sur grille.

As incredible as it may sound, the sun is indeed shining on Moscow today ! I even took the liberty to walk to work without my hood on ! How nice to feel the warm sun on my face again... I've heard that by the end of the week it might even go up to 5°C outside ! First step towards spring my friends, I can feel it !
Ok enough with the hair salon small talk, today we're making scones, of the flaky, buttery kind. That's one recipe you'll always want to keep close at hand, for a brunch or an afternoon tea. These have the texture I love when I eat scones, kinda crumbly and flaky, of the melt-in-your mouth kind.
By the way, the raspberry jam and the milky cup of tea are definitely not optional with these ! If you wanna go all British on this, you'll add a big dollop of clotted cream. Your choice !
RECIPE FOR 7 OR 8 SCONES
(adapted from Like a strawberry milk)
250 g flour
40 g caster sugar
1/2 tablespoon baking powder
1 pinch of fine salt
100 g cold diced butter
160 g milk kefir (or buttermilk)
1 egg yolk for the eggwash
Crumble the cold butter with the dry ingredients. Don't overwork the butter though or the final texture would change and not be as flaky.
Add the kefir and mix just enough to incorporate. Roll out the dough to 3 cm thick. Let it rest in the fridge for 30 minutes.
Preheat your oven on 180°C.
Cut the dough with a cutter or glass so you get 6 to 7 cm diameter scones. Flip them over and put them on a baking tray covered with parchment paper. Brush with the eggwash (egg yolk diluted with water). Bake 15 minutes. Let cool on a rack.
